ive got the fever.......

the bieber fever that is :)

okay- so the other week my hubby looks at me and says.... "do you think my hair looks like justin bieber?" i couldnt stop laughing. i STILL laugh out loud when i think about it. so, thank you bradley for making me smile!

my dear friend sent me this after she and i laughed for about 5 mins straight when i told her what bradley said...

pimento cheese



oh, thank you southern living magazine...how i love the day you show up in my mailbox. may was no exception. i got this amazing pimiento cheese recipe! and just in time since i've been wanting to cook non stop lately??
when i was little i wouldn't eat pimiento cheese...i thought it looked gross. what was i thinking? i was MISSING out like whoa.

"a little southern know-how"

PiMiENTO CHEESE

what you need:

1 1/2 cups of Duke's mayonnaise
1 (4oz) jar diced pimiento
1 tsp. Worcestershire sauce
1 tsp. finely grated onion
1/4 tsp. ground red pepper
1 cup chopped pecans
1 (8-oz) block extra-sharp cheddar cheese
1 (8-oz) block sharp cheddar cheese

Step one: make the mayo mixture. in a large bowl, stir together 1 1/2 cups of Duke's mayonnaise; 1 (4oz) jar diced pimiento, drained; 1 tsp. worcestershire sauce; 1 tsp. finely grated onion; and 1/4 tsp. ground red pepper until blended.

Step two: toast the pecans. preheat your oven to 350 degrees. bake 1 cup chopped pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. (stirring helps to ensure even browning)

Step three: shred the cheese. texture matters! using the small side of a box grater, finely shred 1 (8-oz) block extra-sharp cheddar cheese. then use the large side of the grater to coarsely shred 1 (8-oz) block sharp cheddar cheese.

Step four: add pecans and shredded cheeses to mayo mixture, stirring until blended. you can store in fridge up to 1 week...but i don't think it will last that long!

oreo cheescake? yum!

a weekend full of great friends and the beach...what can be better?

Thank you, beantown baker for this awesome oreo cheesecake cupcake recipe! i made them for chrissy and justin's baby shower! they were DELISH if i do say so myself.

give it a try and ENJOY!

Oreo Cheesecake Cupcakes.

42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
2 pounds cream cheese, room temperature
1 cup sugar
1 tsp vanilla extract
4 eggs, room temperature, lightly beaten
1 cup sour cream
Pinch of salt

Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.

FouR

i'm back! :)

1. my first concert was hanson. i loved them. i was obsessed with them. i wore hanson t-shirts to school. this was 5th grade.
2. i can flip my tounge around in my mouth. as in i can make it go upside down. it's amazing and i love doing it. weird.
3. if i don't like the way something looks that i've written...i will write it all over again just so my handwritting is pretty. grocery list that looks sloppy? yep, im re-writing it.
4. i love to bake. but... often times i skip the hard work and just buy the boxed cakes. i mean, from scratch takes so effort. ahhh. dont call me a baker just yet. a real baker would never.
