My dear friend Shannon’s husband is a HUGE Ron Paul supporter. His birthday was yesterday so Shannon and I were talking on Monday about what kind of cupcakes we could do for him. As you know, Shannon and I have been on a cupcake-making kick lately…see Call of Duty, Skating… (and there was a Taylor Swift cupcake cake that I realized I never blogged about! must do. it was adorbs!)
Shannon couldn’t help this go around due to her schedule but I was determined Ron Paul cupcakes would be had for Kevin’s birthday. I mean, seriously, Ron Paul is like the ONLY thing Kevin posts on facebook, he was him for Halloween, and I’ve pretty much only seen him wearing Ron Paul shirts. Oh, and they have a flag by their mailbox in their yard. Yep, BIG Ron Paul supporter! Ha :)
I cut up a pizza box, taped it, and painted it gray. I found all the pictures of Ron Paul on the Internet and proceeded to cut them and Modge Podge them onto the pizza box. I’m pretty happy with the way it turned out even if it was a pizza box!
The cupcakes were strawberry with cream cheese icing and from what I hear they were a hit!!

lately.
i've been so busy lately. i have a lot of blog reading to catch up on :)
toby keith was a blast.
it was like 107* which is why i looked like a sweaty mess.
mr keith did play "should've been a cowboy" and i was one happy girl!
bradley and i went to the beach and hung out with family last week.
sister and mom!
and then to one of my really fabulous friends couples baby showers! i can't wait to meet chris and leah's bundle of joy!
on the note of babies...another fabulous friend is also preggo. it's so exciting!! you girls are going to make amazing mothers!

halloween.
we went to a halloween party on saturday. here are a few shots...

we had a blast. my costume was a totally diy. the headband was from the halloween store. the toga was made out of 2 yards of fabric from a fabric store and the belt was a rope also from the fabric store. thank goodness for spencer and safety pins...otherwise i would have had NO costume! :)

chocolate cake and vanilla buttercream.
one time i used my go to choc cake and go to vanilla buttercream recipes...

this was for my friend's birthday. she is obsessed with all things nautical. seriously. so, this is chocolate cupcakes. vanilla buttercream with blue food coloring mixed to look like the ocean. powered sugar doughnuts with fruit roll ups to look like life preservers. :) i thought they were cute and they were a big hit!

my go to chocolate cake/cupcake recipe if from hersheys.
what you need:
• 2 cups sugar
• 1-3/4 cups all-purpose flour
• 3/4 cup HERSHEY'S Cocoa
• 1-1/2 teaspoons baking powder
• 1-1/2 teaspoons baking soda
• 1 teaspoon salt
• 2 eggs
• 1 cup milk
• 1/2 cup vegetable oil
• 2 teaspoons vanilla extract
• 1 cup boiling water
what you do:
Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans or cupcake pans.
Baking a one-pan cake: bake 35 to 40 minutes at 350° F
Baking cupcakes: line with baking cups. Fill 2/3 full with batter. Bake 22-25 minutes at 350° F
my go to vanilla buttercream is from, of course, joythebaker
vanilla buttercream
2 cups powdered sugar, sifted
5 tablespoons unsalted butter, at room temperature
2 tablespoons whole milk
1/4 teaspoon vanilla extract
Beat the powdered sugar and butter together in an electric mixer fit with a paddle attachment on medium low speed until the mixture comes together and is well mixed. Turn the mixer speed to low. Combine the milk and the vanilla extract and slowly stream it into the butter and sugar mixture. Once incorporated, turn the mixer to high and beat until the frosting is light and fluffy, at least 5 minutes. The longer the frosting is beaten, the fluffier and lighter it becomes. If you find that your frosting is getting to warm in the summer months, stop beating and set in the fridge for a few minutes. Once chilled, hook the frosting back up the the mixer and beat once more until you reach the desired consistency.

pumpkin pecan bars

beantown baker calls them thanksgiving two-fer bars. i called them pumpkin pecan bars. whatever tickles your fancy. thank you jen for this amazing pumpkin pecan pie in bar form. ammmmmazing.
i made these for my friend hannah's birthday. they were amazing. i ate them for breakfast,lunch, dinner. i wanted more. yummm.
so here goes:
pumpkin pecan bars
Crust Layer:
1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
3/4 cup + 2 Tbsp pecans, ground
2/3 cup butter, at room temperature
Pumpkin Filling:
2 cup canned unsweetened pumpkin puree
1 1⁄3 cup heavy cream
1 cup (packed) brown sugar (light or dark)
3 large eggs
1 tsp. pure vanilla extract
1 tsp. ground cinnamon
1⁄2 tsp. ground ginger
1⁄2 tsp. salt
Pecan Pie Filling:
1 cup light or dark corn syrup
1⁄2 cup packed light brown sugar
4 tbsp. unsalted butter, melted
3 eggs
1 tsp. pure vanilla extract
1⁄2 tsp. ground cinnamon
1⁄4 tsp. salt
3 cups (about 14 oz.) pecan halves or pieces
For the crust:
Preheat the oven to 350ºFC.
Using the paddle attachment of your mixer, mix all of the crust ingredients together until coarse crumbs are formed. In a 9 x 13-inch baking dish, press down the crust.
Bake at 350ºF for about 15 to 20 minutes, or until the edges start to brown. The crust will rise slightly after baking. Let the crust cool completely at room temperature.
For the pumpkin filling: Pulse all ingredients together in a food processor Leave filling in bowl.
For the pecan filling: In a bowl, whisk together all ingredients except pecans until smooth.
To assemble: Preheat oven to 450. Give the pumpkin filling one last quick pulse, then remove bowl, rap it on counter to debubble batter, and pour filling into crust. Top pumpkin filling evenly with pecans, then pour over pecan filling. Poke down any pecans that float to the top and aren't covered with filling. Bake bars for 15 minutes.
Reduce oven temperature to 300° and bake for another 55-65 minutes, or until it is evenly puffed and a slender knife inserted into the center comes out clean. Transfer bars to a cooling rack and let it stand until it is just warm or until it reaches room temperature.

thankful.
i am thankful for many things. many many things. here's a few things i am thankful about in the blog world.
i am very thankful for my best friend, you know her... HAYLEY. she helped to make my birthday FABULOUS! we had sushi...we danced all night long at trio...we ate too much food...we had a sunday funday...the list goes on & on... check out this amazing birthdy cake. (you know us south carolina people... we are obsessed with our flag. i have many many things with the palmetto tree & moon on it. what can i say, we are proud carolinians, i guess?)

i am thankful that sweet michele gave me my very first blog award...

* i have known michele since elem school...i am thankful we are back in touch through facebook and blogs! she is an insanely adorable person.
i am SO thankful that i won a giveaway!! i found out last friday and was soooo excited. so, thank you to jen!! check out her blog :)
okay, and speaking of michele AND a giveaway...

10 years.
It all started in 7th grade English class. I guess we owe it to Mrs. Davis. (Minus the fact she made us face opposite ways so we couldn’t talk to each other… ☺) Oh, I guess we, too, owe it to our awesome moms who carted us back and forth to each other’s houses constantly…
10 years of friendship. Almost 11. That’s what Hayley and I have together. We have had our share of ups and downs, inside jokes, and lots of laughter. Through all the years we certainly haven’t talked everyday or kept in touch like we should. I believe I can even say we completely grew apart for few years. But somehow, someway we could always pick right back up where we left off. And that’s what we did a year and half ago…we just picked right back up like we had never stopped talking. We have talked every day since. She’s family to me and there is nothing I wouldn’t do for her. I know that I will never meet someone better than her to call my best friend.
So here’s to you Hayley, thanks for always being so freaking amazing.
